Mini Chocolate Covered Cupcakes

I used store bought mini muffins! You know the kind that come in the plastic container? I melted some light chocolate (again stir every 30 sec) in the microwave. Then I poured a small amount into the bottom part of the plastic muffin container that you just bought.
{You could also buy a candy mold like this but I saved $3 because I used the plastic container that the muffins came in.)
You may have to play around a bit to get the correct amount. Then place your muffin in the chocolate base so that it covers the bottom and all the way up to the rim of the muffin top.
Place in the fridge to harden
Melt your pink chocolate in the microwave
Dip top of muffin in pink chocolate then decorate with candy sprinkles and a red M&M.
Cute as a button!
